Homemade Pesto!

I’ve had this plant in my apartment overflowing with basil and just had to do something with it, so I thought pesto would be a perfect idea! I tried out a recipe that I got from a friend and after posting a picture of it on Instagram (you can follow me at @intrufashion), alot of people have been asking me about it, so I thought I’d share it on the blog.  After a challenging start (I had some blender drama and couldn’t get the blade to spin. But my new hand blender came to the rescue), this recipe was pretty easy and really delicious. I used the pesto as a sauce for my pasta, but you can also mix it with some olive oil as a bread dipping appetizer, or use it as the sauce for your pizza. 
Ingredients:
1 bunch or medium bag of washed spinach
Several leaves of fresh basil for flavor
3/4 cup of chopped walnuts
3/4 cup of grated Parmesan
2 or more large cloves of garlic
Directions:
  • Pulse your processor thoroughly mince the contents together (you can also use a blender)
  • With the processor running, add extra virgin olive oil in a steady stream until you reach the desired consistency
  • You can adjust flavors to your liking if you please- add more Parmesan, more garlic or basil to taste
  • Add lemon juice to freshen the flavors and preserve the color
You can store the pesto in a glass container in the fridge or you can also freeze it to have on hand. Drizzle some olive oil over the top to serve as an air barrier.

Sneak peak into the Honeymoon

Yes, the wedding actually happened! It was the most incredible day ever and I can’t wait to tell you all about it! I know I went completely missing from the blogosphere for a bit while i was busy planning and working, but I have a TON to tell you as soon as I get back from the honeymoon! Latest Obsession: CeCe Toppings

Embellished, bejeweled and even peter pan- it’s no secret that collars are all the rage right now. It’s an adorable look, but when trying to get that “geeky chic” style, it can sometimes get too bulky and uncomfortable with all the layering. Wow, have I been bad with blogging in 2012 (so sorry!)! … The truth is, I took a mini vacay from posting as I really was away in Florida and then transitioning into a new job :) Things have been pretty crazy so far in 2012. This is a BIG year for me- the wedding is only months away!

p.s. I got this bag while I was in Florida and I’ve been using it every day since. It holds literally EVERYTHING and it was on sale for only $25!!

Reader Question: Where can I find a bag big enough for my laptop, but sleek enough to wear for a night out?

Q:  I am looking for a bag, preferably black, but a splash of color never hurt anyone. I need it to be big enough that I can slip my laptop in (13″ mac book), but still sleek enough to wear for a night out. Pour La Victoire’s Marseille satchel and Topshop’s leather side zip satchel both have a great shape for your laptop to easily slide in and out of, while still being sleek enough to transfer into your nighttime look.
